Broccoli Rabe & Italian Sausage with cavatelli
Ingredients:
(Serves 6)
2 to 3lbs of our New York Sausage Company Sweet Italian sausage
1 1/2 to 2 pounds of cavatelli (alternate pasta can be used or if you prefer no pasta that is fine also)
2 1/4 pounds cleaned broccoli rabe (wash well, trim roots, and coarsely chop leaves)
1/2 cup olive oil
2 cloves garlic, crushed
Salt to taste
Pecorino Romano cheese grated(Optional)
Hot pepper, if you like it
Cooking Instructions:
Fry the New York Sausage Company Italian sausage in Olive Oil (not the 1/2 cup mentioned above) cook until inside is
not pink or about 20 to 30 minutes over a medium flame.
Another option is to grill them on the barbeque ( a personal favorite)
Drain the broccoli rabe well and cook them until half done in lightly salted boiling water
(3-5 minutes from when the water resumes boiling after you add them to the pot).
Drain them well, and squeeze them to force out the bitter juices.
In a seperate pan from the sausage sauté the garlic in the oil, and when it is golden, add the
broccoli rabe. Cook over a brisk flame, stirring constantly, for about 10 minutes. Season with
the hot pepper, if you are using it. Check seasoning at this point.
Cook cavatelli as per instructions.
Slice the sausage links into discs then add to broccoli rabe and cavatelli and mix it well in a big pasta bowl.
Sprinkle Pecorino Romano cheese over each individual serving (Optional)
